Delicious mint and lemon cordial!

Make a lovely cordial with the first peppermint leaves. We picked them from the garden (with help from the hen!). Tear a generous handful up into a sugar syrup made from 500g sugar and 500ml water. Then add the zest, juice and peels of two or three lemons (we only had one, so it'll be super minty!). Then heat it gently to dissolve the sugar, and let it steep for at least ten minutes.

Then strain it into a jug, and pour it into a sterilised bottle. It'll keep in the fridge for a week at least. Dilute it with water, sparkling water or tonic. Grown ups - it's also very nice as a mixer!

When you use the first, new leaves, you get a beautiful pink cordial. Enjoy!
