If you don't have all the same ingredients, don't worry- you can swop the carrots for a whole range of vegetables including parsnip, sweet potato, squash, pumpkin or similar, and the leeks can be swopped for onions.
Cooking time is about an hour on a medium heat- until the vegetables are soft.
It's really tasty and healthy too!
